You don't, really. The goal is not to operate the vehicle like a racing game, but to design a car that by its nature can successfully pass through each level. Tilting the device or tapping the screen while the car is driving will have no effect.
The 3 different materials (straw, wood, stone) represent different weights (1 kg, 2 kg, and 3kg respectively). The more pieces you add to your car, the heavier it will be. Heavier cars have more difficulty making jumps and loops, but the balance of weight between front and back can alter a car's ability to flip and roll. The best way to learn is to experiment with different car concepts.
It depends on the level you are playing. There will be cases where you want to force your car to drop quickly off a ledge, to be weighted in the back for stability, or to flip forward.
A few minor bugs and UI tweaks, but mostly version 1.1 polishes the presentation of the game. New backgrounds, animations, and cutscenes will make the game a more immersive experience. Also, you can share your progress and star collecting to Facebook and Twitter!

The Game Center leaderboard measures the longest distance run achieved in sandbox mode. The sandbox mode uses an algorithm to randomly generate a course of increasing difficulty. While the sandbox course will be different for every player, the algorithm is shared - and players are given the opportunity to alter their design and retry the same course again.
That's the game's villain, Squid Vicious. If your car gets stuck he will catch up to you and disassemble your vehicle!
